Ingredients:
- 2 TB Olive Oil
- 1 Large Onion, thinly sliced
- 1 TB Garlic, minced
- 1 Can White Beans, rinsed & drained
- 4 Cups Kale, cleaned, drained and roughly chopped
- 1 Cup Vegetable Broth
- Salt and pepper to taste
- Saute the onion in olive oil on low heat until caramelized
- Add garlic after onions are caramelized and saute 1 minute
- Turn heat up to medium high and add remaining ingredients
- Cook until kale is wilted and beans are heated through
