Makes 6 servings
Ingredients:
- 1, 14.5 ounce can organic, salt-free black beans
- ½ C thawed frozen corn
- 1 C Cherry tomatoes, halved (hold in separate bowl and top the salad just before you eat so they don’t water down the salad and add to the salad when serving)
- 1 Red pepper, medium sliced
- 1 Yellow Pepper, medium sliced
- ½ C Cucumber, peeled and chopped
- 1 Orange Pepper, medium sliced
- ½ C Red Onion, chopped
- 1/2 C Jicama, chopped
- ½ C Cilantro, thinly sliced
- 2 TB Lemon jucie, fresh
- 1 TB Olive Oil, extra virgin
- 1/4 tsp Sea Salt
Cooking Instructions:
- Chop up these ingredients and place in a large bowl- mix well. For a less water salad, reserve tomatoes for when you are serving
